Sausage Stuffed Peppers
3 peppers, any color, cleaned, seeded, cut in half and set aside in a glass baking dish.
In a frying pan:
Brown 1 pound of Jimmy Dean sausage. Depending on the amount of grease,
drain or simple dab with paper towels.
Add 2 boxes of Long Grain and Wild Rice-a-Roni to the cooked sausage
and make according to box directions (simmering about 20-25 minutes).
When rice is cooked through, add 1 8 oz. bag of parmesan cheese
and mix well.
Spoon mixture into halved peppers.
Cover with foil and bake @ 350* for 35-40 minutes.
During the last ten minutes of baking, top with cheese of choice
(more parmesan or grated cheddar).
